I bought the Big honcho with Gas Flush a few weeks ago, this will allow me to blow nitrogen into the bags to keep stuff fresh (Ex: if I make homemade potato chips, etc)

Figured that’s only a couple blinds for you big dawg

Yeah, it’s not cheap but it’s paid for itself by reducing food waste and by buying in bulk and freezing or storing dry goods long term

im sorta pissed that kenji's cookbook has recipe versions less good than seriouseats.

did the corn chowder, really good! but not thick enough.. behold.. seriouseats has flour and the book doesnt!

i knew it was weird making a cream type soup with lots of butter and no flour.

Making pesto in a mortar & pestle like they do in this is fantastic. Tried it last summer for the first time. The consistency is just better than using a blender imo.

been hot here so we made green salads last night (as we did the previous two).
took a couple of thick slices of heirloom, s&P, and stacked them up with thin shallot between and gave it a rough chop then drizzled with nice balsamic and lemon. let the pile sit while prepping the rest of the salad and put the mix on top as the dressing.
do recommend

nah it gives thickness and the taste gets cooked off after 10m

its a basic french technique. It's not the first time i've seen stuff missing in his book compared to the seriouseats recipe. Often its his beloved fish sauce squirt.

If anyone has had chili crisp from Trader Joes and probably most other places, I hate to tell you but it SUCKS in comparison to homemade (I was at Trader Joes and bought some to compare)


However, you may want to ignore the above so ignorance can continue to be bliss because when you have this stuff lying around, it can be irresistible to not eat right of the jar.

I’m never making it myself, so is TJ’s the cheapest one? Because I will try that and live in ignorant bliss, I’m also willing to go get one at an international market as long as it’s cheap as well.

I think the cheapest is Lao Gan Ma Spicy Chili Crisp Hot Sauce at asian markets and from what I understand, its the original.





I havent tried it yet but just ordered some off amazon for 5 bucks, I think you can get it for about half that at the asian market. Momofuku and fly by Jing are $12+ each so its worth making yourself if you have a Sams close by where you can get a hug bag of peeled garlic for 9 bucks. Momfukus is still the best I've had but I'm like homemade because I'm playing around adding stuff like Szechuan chili powder, MSG, diced ginger, some even suggest peanuts plus if I dont want it so hot, I can back off on the hot peppers

unfortunately my bottom burned because the thing i had to cover was too small and it pushed down on the bread.
