It doesn’t take long in an Airbnb kitchen to realize why so many people don’t like cooking. I’m just rage buying stuff now. And yes I’ll be bringing my aluminum foil home with me!

First thing I do is put a couple of drops of oil in a pan and toast a few corn tortillas on both sides to get rid of the funk sometimes on there and make them toasty and pliable, stack those in a dish towel in the toaster on warm. Not sure if this is a fire hazard, be careful.

Prep the slaw. Basically finely sliced whatever you want. This time I did red cabbage, carrot, finely minced onion (so that its just kind of an onion pulp - you can use chopped onions if you want but my wife doesn't like 'raw onion' so i have to hide it), minced garlic, minced cilantro stems, a big pinch of salt and lime and a shake of your favorite hot sauce. Cod isn't crazy flavorful so get your spicy, tangy, crunchy and fresh (soapy?) flavors in here. I have a fermented hot sauce from the farmers market which amps this up even further.

For the cod, I prefer loin to filet because it's harder to overcook and makes nicer 'nuggets', but cod seems relatively forgiving. You can use other fish too, aim for a flaky white fish with mild flavor. You can make your preferred mexican flavor rub which I used to do, or you can use taijin and cumin (too fake lime for me but good in a pinch). These days I really like the baja fish seasoning mix from McCormick. Pat dry the fish, coat in rub, and a few TB of oil in a pan and cook. Just like a burger, when you can see the cooking progress coming through from the top, flip and cook just a little while longer. Target is flaky and cooked through, but still able to handle in chunks. Taste the fish, you might want to add salt or lime.

Done! Assemble on a tortilla, top with fresh cilantro and something creamy. Cumin sour cream is always a good choice, we've been using the Blue Top brand cilantro serrano creamy hot sauce. A pound of fish makes about 10 tacos.

I have the scscscilantro gene and it sucks. I still eat it though. Soapy isn't what I taste, but it isn't MMMMMM.

I’ve been on a chili crisp bender lately.

I ordered Momofuku’s chili crunch last month. It is excellent. 5 for $50 and free shipping. Great to mix w a little honey and then put on pizza.

Last week I tried Fly by Jing Sichuan chili crisp. Also fantastic. This one is the priciest. $15 per container (6oz). I highly recommend their other sauce called Zhong sauce the most. It won my sauce of the year award in 2020. Great on dumplings.

I’d recommend trying all 3 of these.

My girlfriend just rolls her eyes now when I come home from a trip with yet another set of storage containers and another freaking cheese grater (I will never buy pregrated cheese again). We have a LOT of random containers.

Air fryers are the bomb! Doing a whole chicken tonight.

Did cheap sirloin strip from frozen last night, and it was actually pretty tasty and tender. Olive oil and seasoning, 15 - 20 minutes at 360 depending on how you like it, flip halfway. Awesome way to cook a cheap steak from frozen and then use it for whatever you want. If we had seared this one in a skillet with butter and garlic, it would have actually been very good.

cs - have you tried hummus as a base for those naan pizzas yet?
i can see using a hummus base with kalamata olives, feta, sun dried tomatoes, onion, pickled peppers of some kind, olive oil drizzle, etc.

suggesting a hummus with plenty of moisture. i'm sure i posted itt a year or so ago, but i tried to make a pizza with hummus that was very good to eat as hummus but it really dried out when tried as a pizza base.

A few years back when I was regularly on night shift I got way into bagel pizza, using the store-bought mini bagels and, sometimes, naan. Just trying to make something at 4am that I'd like and wouldn't wake the house. For me, you could use off-the-shelf stuff - crust, sauce, toppings, whatever - if you used some quality seasonings to step it all up.

But you're still eating bagel bites at 4am. There's limits.

EDIT: That's also a fantastic-looking pizza.

I haven't tried that, but using hummus sounds like a fantastic idea
And man, I love all those toppings you listed. Kalamata olives in my top 5 pizza toppings

That air fryer looks awesome but I'm pretty intrigued by you water kettle. That's a lot of buttons to boil water.
