Looking for recs regarding Thanksgiving/Christmas dinners. Since they are both CANCELED this year(at least in USA#FU) I am considering making something completely un-holiday. No turkey, ham, prime rib, mashed, all the go-tos. I ain't doing that **** for nothin.

My first piece to the puzzle is probably those laser ****ing potatoes, but open for any and all other ideas. Could be anything.

I’m thinking you’re going to be bored and have nothing to do, so something with lots of steps might be in order.

I’m voting for Korean bbq. All the meats and all the pickles and sauces and **** will keep you busy for a week.

Um looks better than most chicken and dumplings I’ve come across.

If you didn't live in the Northeast where the ground will be frozen I'd say bury a pig.
Can get drunk while tending to a big fire and hurting profanities at the sky then go to bed and dig your pig up the next day to tiki music.
Get the tiki torches going on Thanksgiving day and the neighbors will think you've lost it.

FYI. I’ve buried pigs upstate NY in the dead of winter in sub freezing temps and it was still fine as long as it’s not too wet in the pit.

Tiki torches with a roasted pig in the dead of winter sounds like the way to go.

thx, it was pretty good. I think the glutenous stock, the white wine and white wine vinegar give it good flavor and body

I never add peas to soups, stews and this dish until serving because they lose their nice green color, so its easy to just taken frozen peas, nuke for about 30-45 seconds and add plus some people dont like peas making it easy to leave out

I've known several people who've substituted lasagna for traditional holiday meals.
The 2p2, now world, famous pierogis.
I think I'm going to be putting my new smoker to use. Brisket, turkey, and ?

Ribs?? Summer Sausage! Got the idea of doing summer sausage on the grill from local Houston chef Chris Shepherd. If you can get a good one from a local smokehouse or bbq joint. Good thing is it comes off early and can be the centerpiece of a redneck charcuterie board. Add in some flamin hot Funyuns, jalepeno bacon cheddar or good pimento, maybe some big bottles of Miller High Life or 40z of Bud that you serve to your guests in champagne glasses.

I was anti Turkey until I started smoking them on my grill, totally different animal. I like to do a brine/marinade that includes fish sauce and winter citrus. Put that on the grill/smoker and watch Thanksgiving football. Sadly won’t get to watch Bills crush the Cowgirls in Jerry land this year.

Through some back channels, I was able to acquire a few of these seaonal beauties. Matsutakes, aka pine mushrooms.



Cleaned up. Had to shave and peel as the dirt was a bit too embedded for a damp towel.



Pan seared with some lime zest in place of sudachi.



Other half cooked with dashi and rice for matsutake Gohan.

Garlic Steamed prawns with bean vermicelli. Had to feed the kid before taking pic.

Very nice amoeba! Had a friend visit a couple of days ago who is a bit of a mycologist, so we went picking on a nearby common and got a decent haul of a few varieties (not sure which, I can only identify 'naughty' 'shrooms - product of a misspent youth...).
Fried some up with butter and garlic to have with toast, and made a chicken+mushroom risotto with the rest.
Only photo I got was an arty farty one.



Also went out to a local pub that has a Michelin star for a delicious lunch. Friend doesn't eat much, so I ended up having the better part of 3 starters and a main, not that I was complaining.

Fillet steak tartare


Leek and potato soup, hazelnuts & rapeseed (Sounds dull, but was crazy good and insanely rich. That one bowl would have made a perfectly satisfying lunch for the both of us on it's own). It was also full of cheese and wild mushrooms.


Cheese soufflé with Compté & walnut


Pork cutlet with braised cabbage, apple & mashed potato


All delicious and, as it's a pub, had a super chilled, laid back atmosphere, which was really nice. Very decent prices for the quality too.
