I use that Hot Pepper Jelly for one of my go-to's for football season: Get a short or long log of plain goat cheese and cut a V wedge in the top and spoon the jelly on top of it. Surround with misc crackers, done. Even kids love it, I highly recommend.

From the school of improvised/lazy cooking, I just want to share how I've been making pseudo-ghetto consomme.

Left over roti chicken (CostCo/Fairway...) in pressure cooker and some shallots/scallions/onions whatever I have on hand for two hours. No additional seasoning necessary. Bones are disintegrated and I got self seasoned stock at this point.

Let cool for a bit.

Run the whole thing through a sieve into another pot to filter out all the bones and random bits.

Beat a bunch of egg whites into the stock. I tend to err on a bit more than is probably necessary.

Bring back to simmer.

Ladle off the scum/egg whites to the extent possible, depending on how lazy I feel, I usually just ladle off the biggest pieces before moving on.

Which is run through a sieve. Then run through a cheese cloth or coffee filter (what I used today). I usually just put the filter on a sieve over a stock pot and pour/ladle.

Ghetto consomme done: cost=a coffee filter, bunch of eggs, scallions/shallots/onions, and left over roti chicken bone. Never mind the only real savings is the cost of chicken stock.

PS: I got a CostCo membership and has been ordering on InstaCart. It's glorious.

For the ultra cheap version use a block of cream cheese (dress up the shape if you want it not to be obvious - hell wrap it in plastic wrap to get a log shape if you want). You think kids love the goat cheese version, give them the cream cheese log and save $10 and they'll never know.

LOL... i have a relevant story involving grey goose (not mine) and a 64oz slurpee cup (also not mine). in summary, most of it went down the drain.

Anyone ever just take plain yogurt and drain it in cheesecloth for 18hrs or so? Makes a nice, tangy cream cheese that the resident bread bakers would love.
Pretty sure it's lebnah. A great low effort to taste ratio.
I mix in toum before draining if I have it on hand for a garlic cream cheese.

Agreed it’s the least tasty green and gross. It is the most healthy one and makes you feel the best after eating, though. Lately, I’ve been sauteeing it with bacon, onion, garlic, jalepeno, and a ton of butter, and it’s still not good, but very edible. In a smoothie with a lot of fruits it’s fine too.

I put kale in all my protein shakes. It’s pretty awful everywhere else. Its flavor ceiling is very low compared to most vegetables.

It removes the bitter flavor. I remove the stems thicker than about 1/4 inch, but I'm not dogmatic about it.

My sourdough yeast I’ve been working on for a couple of weeks is coming along a lot better.



I plan on making my first ever beef ribs. Not sure how this will come out as these seem to be finicky. I’m completely ok using these for chili or stew if they come out bad.




While waiting for the charcoal to come to temp I decided to cook some cowboy sourdough biscuits in the grill





Biscuits came out 10 times better than my first batch of hockey pucks but still a long way to go.
