Decided to get my Asian on with all the crispy chili talk. Went to an Asian market in search of ingredients, wanted to get the stuff posted here, but it was a thai-centric place so grabbed some thai chili paste, rice noodles and a few extras and went to town on a skrimp dish.

Leggo:



Guy at store said "very hot..."



Made an unadulterated one for the lady and then went to town on the hot:



Add noodles with a little soy and rice vinegar:



Fin:



And unadulterated:




Ish was HOT, but thai hot, which as best as I can explain it is HOT, but the heat dissipates fairly quickly.

Happy with the outcome, will Asian again.

Whether heat is sharp like that and dissipates or builds depends on the amount (and type) of fat in the food. Capsaicin is fat-soluble (which is why milk, among other things, is good for curing a burning mouth) so in fatty foods it tends to stay in solution and only slowly builds up on your tongue. If there's not much fat, it just gets dumped on your tongue straightaway. That's why things like Thai green curry aren't really "thai hot", they do tend to build.

Edit: I'm not sure, but I suspect that an emulsion (like milk, or a curry) is best at concealing heat, because it tends to keep the content of the fat regions of the emulsion away from your tongue. Simply putting chilli oil on your tongue would be a sharper heat, and then a water solution would be sharper again.

I do like a chick who orders her curries "Indian hot", but am always curious how much pain they are in when they do their girly 30 second deuce the next morning, while I'm not ashamed to spend 30 minutes writhing on the toilet. Sorry for the potty mouth.

Does baking count for this thread. Made some really good bread today.

Saw some overripe bananas and decided on making some banana bread. First time I've made bread here.

Ingredients

-3 slightly overripe bananas, mashed in large mixing bowl
-1/3 cup of melted better
-1 teaspoon of baking soda
-pinch of salt
-3/4 cup of sugar (adjust in accordance to desired sweetness)
-1 extra large egg, beaten
-1 teaspoon of vanilla extract
-1 1/2 cups of white flour

1. Butter a 4 x 8 bread pan and preheat oven to 350 degrees Fahrenheit
2. Mash bananas with fork until smooth and add to mixing bowl
3. Combine all other ingredients, adding them in the order listed above.
4. Continue mixing vigorously until mixture begins to thicken and become dense.
5. Pour into bread pan and place bread into oven for 1 hour
6. Remove bread from pan and let cool for 15 minutes before serving

Next time, I'll be swapping in some different ingredients to make a healthier banana bread, hopefully without sacrificing too much deliciousness.

Thanks. It's amazingly easy to make too. All you need is one bowl to mix everything in and some measuring cups/spoons.

Gonna experiment a bit by subbing out a few ingredients out for some healthier alternates when I have another go at it this coming weekend. Will be sure to report on the outcome.

Will likely cook some stir fry tomorrow. I have various recipes I use but like to tweak things from time to time. Presentation ain't a strength of mine. But I'll post some pictures anyway.

Raisins, dried cherries and cranberries rehydrated in honey and cider vinegar and reduced. It’s good...not really necessary to use all that sugar to make chicken taste good though.

Girlfriend made soups vide pork chops and mushroom carbonara for a get together.



Had some of this after dinner and I highly recommend it if you ever happen to be in Michigan or somewhere they distribute.
