If there is another family in the US (hell, the World for that matter) that cooks their own food at home on.a daily basis and eats better than the btc clan, I'd sure like to meet them and see their work

My first Anova test, I dont know if it was optimal doneness as i use the first setting for a duck breast i found in the application but damn that s easy and efficient(lol at me for waiting 2 years before pulling the trigger)

Considering how terrible my stove and pan are that sear isnt bad so yeah it's a pretty good result and sadly much better cooked than any duck breast I ever had before(sick beat i guess)

Duck breast is one of the few things I pre sear at a low heat prior to sous vide. Also remember to score to increase fat rendering.

I did a high heat presear with canola oil prior to sous vide and a low heat one post sous vide.
result was ok but with my sample size of one I lack perspective

My wife complained about my anova purchase, she cooked one duck breast in a pan then i did mine and i didnt hear any complain anymore after that

Just gonna dump a bunch of pics from my phone. If you have any questions about any of the dishes, let me know. Eat 90%+ of our meals at home. These are all from the last couple of months. Maybe not btc worthy but I'm trying.

Kinda Eggs Benedict. 2 Soft poached eggs over a half of a pan butter toasted bagel with faux hollandaise sauce with fresh Fredricksburg peaches.

I do a lot of "Chopped' type of cooking where I just look at leftover food/ingredients and make something. But I give myself an hour for each round. I think that sauce started out as leftover egg drop soup that I made a day or two before.

You have no idea how many hours I have spent on YouTube watching people boil a damn egg.

Of course you have to do your own research...

Pretty sure those were '64's. 6 minutes straight into boiling water. Remove from heat and cover for 4 minutes. Remove and wrap in aluminum foil until just warm, about 30 mins.

I don't shock any of the ones I make. Also put baking soda, salt and vinegar in the water. Have no idea if it does anything but it makes me feel better.

Yes. And I make them with lard and real butter. 1 batch makes 12 to 13 tortillas. I keep the dough in a glass bowl covered with a damp cup towel and cook fresh when needed.
