Noob question, but if I want to do multiple chicken breasts SV, they need to be individually bagged, correct?

Nope you can do a bunch. Make sure you put some oil in the bag so they don’t stick together.

And keep them in a single layer if possible, or else you will need a longer bath time.

Is that both water and oil he keeps ladling in?

I cant stop eating this steak and potato recipe, best steak I've ever had, best potatoes I've ever had too. The sliced potato trick is amazing, crispy on the outside, soft and creamy inside. Brocolini is mighty tasty with a bit of the braising butter used on the steak

damn, made myself hungry writing this post

The bamboo and wood ear mushrooms are first cooked in water.

Every time afterwards is oil but it gets drained twice.

Hainan chicken/khao man gai, chicken fat rice, spinach and tofu in chicken broth.

Tom yum goong. All the shrimp sank to the bottom unfortunately so not a great picture. Also didnt use a lot of thai chili oil paste as I can't handle that much spice anymore.

It is legit IMO. Surprised they didn't offer the side of blood either. Every spot in Chiang Mai offered it.

I'm pretty sure that "choompayoon" or whatever means "put it into a bowl".

Btc you deserve a custom 2+2 undertitle for your baking exploits.

So today I finished a BBQ brisket flat in the Instant Pot. Solid results that are a dry run for my next Pastrami (authentic NY pastrami is steamed after smoking/chilling). Only thing considering is if I should tweak water level (1.5 cups) and time 75 min. Came out super tender and delicious.

Agree 100%. Part of what makes btc endearing is that he doesnt seem like a professional baker who is showing off. He seems like a home cook who just really loves baking and is making some tasty stuff in his kitchen. I mean that in the best possible way.
