Had to make a quick dinner for the kids and wife so made a couple simple standbys: soup and naan pizza!



Soup is a bit of a knockoff of the lolOlive Garden zuppa toscana. I used italian sausage, potatoes, white beans, kale, chili flakes, bacon.
Pizza is pizza.
Neither one is even close to fine dining (nor healthy for that matter) but both are quick and filling, and actually pretty tasty.

Bannana cake looks good.

I did a semi cured salmon basically let salmon sit in fridge for a half day in a brown sugar, kosher salt, pepper and paprika rub. Cooked in oven at 200 until they got to 120, than had them sit on counter in the pan with aluminum foil over top. I and my kiddo really liked it.

Cooked Japanese eggplant with sesame oil, seed and soy sauce, brown rice and a serious eats easy Asian pickle recipe.

El Diablo's sweet potato recipe he posted earlier in this thread

They become like sweet potato lava bombs held together by the skin and when you break them open they are almost like liquid sweet potatoes. Very good side.

OOT amateur cooks,

Some cooking I’ve done the last few days:

Coconut shrimp. This was so delicious. And very easy too, just took the frozen coconut shrimp out of the bag and cook them in the oven for 16 minutes.

Ok so not really cooking, but I did make a custom dipping sauce!


Red bell pepper, onion, jalapeño scramble. Just chopped up a bell pepper, half an onion, and a jalapeño and sautéed them all up. Then scrambled in three eggs. Sriracha, sweet chili sauce, and green onions on top. Delicious!


Bbq blue cheese grilled onion burger. I usually make thin smashed burgers, but was craving a thick juicy burger. Half pound of beef broiled to medium rare, topped with blue cheese, a bit of raw sweet onion, grilled onions, and bbq sauce. Omg so good.

I saw draining some greek yogurt online as an alternative, but went with sour cream as that is what I usually do with a normal baked potato.

And that burger is A+. Sometimes you just want a fat, juicy burger.

How did it become popular? And because of my asian heritage, why is it more popular than salt and pepper shrimp?!

Kid loves fish, super picky but if it’s fish whether it’s sardines, Whole, smoked whatever he eats it. My favorite smoked fish is Sable and sturgeon, whitefish but I like getting some nice sockeye salmon filets and doing it myself.

Homemade pickles are super easy and like crack.

Hey if you have a recipe for your upside down banana cake I’d love to see it. Wife likes baking and that looks right in my wheelhouse.

I found and bought labneh the first time I made them. Since that's run out I just do butter and sour cream. So good. I also skip the broiler part and the dill on the outside.
Last time I made them I tented them with foil for probably 20 minutes after they were finished because I don't have a double oven (yet!). The 20 minute rest made them better imo. Usually I would only eat the carmelized skin on the bottom, but the tenting let the moisture soften up all the skin and it was delicious.

Made scrambled eggs with some leftover burgandy mushrooms and gruyere cheese yesterday. I think it might have been the best eggs I've ever had.

El D, those look like some tasty sandwiches. We're doing stuffed onion ring-pinto bean patties tonight.



Da_Nit, here you go:

half cup sugar
half cup brown sugar
2 eggs
1 3/4 cup flour
about 1/2 teaspoon each of salt/baking powder/baking soda
4 large and very ripened bananas
1/4 cup melted margarine or butter
1/2 cup vegetable or canola or blended oil
*optional drop of vanilla extract
*optional pinch of cinnamon

Preheat oven to 375f

Slice up 2 bananas into coins or long strips.

Line and grease a 9 inch cake pan.

Spread 1/4 cup brown sugar on the bottom of the pan, then arrange the bananas pieces on top of the sugar.

Combine oil, margarine, 1/2 cup sugar, 1/4 cup brown sugar, eggs, and two roughly mashed bananas. Mix well. If you like chunks of banana in your cake, mash accordingly. (Add optional vanilla extract and cinnamon here as well)

Sift flour, salt, baking powder, and baking soda into the mixture then fold that in until the flour disappears. Do not over mix and do not stir it up

Pour the batter over the banana pieces and put the pan in the oven.

Reduce temp to 350f and bake for about 35-40 mins.
