no pics?

I dont think the meat is like bread where it can be overworked, probably just had a lean cut of meat. We used pork shoulder and still added fat back to the mix as well, 20% fat should be plenty imo

Da_Nit, finally got around to once upon a time in america. Long movie, but worth it. Fat Moe was a great character. What a cast!

For some reason I can post other pictures but not ones of the sausage?!? Maybe Tapatalk has a phallic filter? Lol. The meat I used was skinless duck breasts I shot in the fall. So yeah suuuuper lean.

Awesome! I bet Fat Moe served some good brisket sandwiches at his bar. It’s in my top 5 movies, love every detail of that movie from the screenplay, cast, cinematography and score just awesome. Another favorite sort of same genre is Miller’s Crossing. Any movie with a subplot were two men are fighting over being with Steve Buscemi is going to be interesting.

Might need to check out the Gotti movie, read the book back in the 90s.

I like to make a lot of mexican food. In order refried beans made from scratch, shredded chicken, marinated skirt steak, and the pièce de résistance BBQ barbacoa. Smoked some chuck roast for 3 hours and then braised for another 3 hours. Who's got some good mexican recipes?

zikzak, that looks great. Runny yolks and hash, yum! You'll probably think this next idea is blasphemy, by you could make a serious pizza crust with some of those leftovers. Reuben pizza with a corned beef hash crust, or just top the crust with some slaw and cheese ala salad pizza. Just do it

Nah I don't really celebrate cinco de mayo. I'm only 1/4 mexican and my family didn't really do anything special growing up. I make the beans maybe 5 or 6 times a year (they freeze and reheat well so you can make big batches) and I've only made the barbacoa once, for father's day last year, but it was a hit so I'm sure I'll make it again. I make the chicken and skirt steak regularly because they are both easy to do.

One of the places I work at had a Reuben pizza on the menu until recently. I thought it was good- not the best idea ever and not as good as some of the other non-traditional pies, but good.

Don’t just dump corned beef hash on pizza dough, though. The potatoes would be too much starch. Some corned beef, some kraut, some Swiss, maybe some caraway seeds. Multiple layers of some/all of the above works out well.

That smoked and braised roast looks great as does the corned beef hash. I stocked up on corned beef at St Paddy’s and just pulled this from the freezer.

Actually i see a lot of bacon and salami thats fairly salty labeled as uncured and I don't get it either.

I bet what it means is no curing salt.

Definition of corned beef is cured brisket, never understood that either. There corned beef is good though I stock up every St. Patties.

I have seen everything from something resembling mashed potatos, to hashbrowns, to home fries.

zikzak's potato prep for hash is the ideal texture imo. Should be roughly same size as diced meat.

Made thin apple tart. Dough is made with evoo instead of butter, and honey is used in the dough + topping instead of sugar. The crust is thinner than the apple slices and still super flaky.

Assume by mashed potato he means something like hash brown patties or balls where the potato is completely mashed and mixed up with the corn beef and fried with the end result looking almost like a crab cake.

Its actually very good. Dont believe Ive ever had a hash with legit mashed potatoes.
