yim, the recipe for that btch of matzah cookies is:

ingredients
1.5 cups finely ground matzah meal - (or cake meal is good too)
1.5 cups chips
tsp salt
tsp cinnamon
.5 cup honey
.5 cup evoo
2 eggs
2 heaping tbs ricotta

Prep
Preheat oven to 350f
Dry things go in one bowl, and wet go in another.
Blend each bowl separately to equally disperse the respective ingredients.
Pour wet mix into dry and stir until it forms a cookie dough.
Spoon out normal sized cookies or spread out one giant cookie
Bake for about 12-15 mins and then let cool for a bit.

Not sure there's enough fat with just almond milk. try some coconut oil or even coconut cream instead of the margarine? I also saw one recipe that uses almond butter to kick up the nutty toffee notes.

I make a mean batch of toffee that was made even better by pouring over a Matzah cracker hot off the press (the toffee, not the matzah). People go berserk over this toffee and adding the matzah cracker takes it out of this world for some reason, SO good!

Dinner tonight. Probably not that appetizing looking.



Live steamed mantis shrimp. Tom yum with live gulf shrimp and little neck clams. Sweet and sour lotus root. Thai style crab omlette.



Wife is not a fan of the thai chili oil I got so its not as red as I normally make it. Texture of live boiled shrimp is great but not conducive for soup. Will resort back to already dead tiger prawns that I can prepeel in future.



Omlette closeup. I didnt dry the crab meat enough so a bit of leakage. Paired with a spicy fish sauce.

Looks awesome as usual amoeba, although, even though I like to think I'm a very open-minded and adventurous eater, those mantis shrimp give me the creeps.

They arent really worth the effort, imo. I like to think I am pretty good at deshelling stuff but I was still struggling and cutting my hand up a bit.

Rather have crawfish.

OOT cooks,

Sunday breakfast:

Cubed a roasted sweet potato and a chicken apple sausage. Warmed it up and tossed a couple of poached eggs on top. Less than 10 min start to finish, and half that time was getting the water warmed up.

I have been wanting to check out Legacy Food Hall to get ideas for a container park I'm working on near White Rock Lake. I want to have several small food concepts in each container so people can come off the trail, have some drinks, ice cream, pastries, shaved ice, a burger or taco or some BBQ or get their biked worked on while they're eating and drinking, etc, etc

I'm in Addison. Never heard of LFH. I think I'm already on record with Ida Claire being among my favorites. I'm moving back home to Knoxville at the end of the month so honestly haven't been paying much attention to Dallas stuff lately. It's sad to say goodbye but I'm excited for everything the future holds. It's a shame we didn't ever get to meet up.

Anyone ever eat at Freddy’s (a Midwest chain)?

The burgers are smashed like paper-thin and are predictably awesome.



Quality-wise they are a hair below my two favorites Smashburger and Shake Shack, but the McDonald’s-like price point make them incredible value overall.

Da_Nit, that looks gorgeous. I also remember Friendly's from my youth. Early bird lunch with grandparents was good times. Friendly's fribble > Carvel shake

Big, Never been to Freddy's but that looks like a solid basket. Very generous with the fries and I like the cut of that pickle . Onion might be a bit thick for my taste though, only rings should be that wide imo.

Made a cheesecake with maple pretzel/matzah crust and chocolate swirl.
