BBQ sounds great. I bet fried chicken too. I am thinking it replaces the corn bread but I am not sure.

Throw another vote in for corn soufflé...absolutely elite side item. My mom makes a killer corn soufflé with green chili added that is so delicious it's always the first thing I go for when I sit down with a plate of food.

Finally found some point cut corn beef at Walmart around St. Patty’s day. Made steamed corned beef and cabbage with carrots and potatoes. Cabbage didn’t do anything for me and my wife but the rest was awesome. Point cut is just so much better than flat cut, it’s incredible what a little more flat can do.

@grizy, it goes with a bunch of meals, but something about the tang from Carolina ribs and the sweetness from corn souffle is other worldly. I have to make it again to post the recipe. Its not many ingredients though, corn, egg, milk, binder and usually some sugar if you want it sweet or some cheese if you go savory. @durango's green chili sounds like an excellent variation to try.

@El, did you forget polenta? And is corn soup a corn chowder?

My favorite corn soups are purees, not chowders. And I’m not a huge polenta fan in general.

too late to edit, but if you haven't tried the Crazy Hot popchips they're worth a go. seriously remind me of old school hot fries or flamin hot cheetos. if they made them with ridges i'd probably have to join a 12 step program. also fun to mix with the cheddar ridges...take one of each and pop them in your mouth.

Went vegan for the night. Made vegetarian banh mi’s for dinner. Zucchini francese banh mi and general tso’s zucchini banh mi.

The loaves


The ingredients – zucchini cutlets, veg combo for pickling


Banh mi 1, zucchini francese with a shmear of spicy garlic hummus on the bread instead of hot peppers and pate.

Bread came out magnificent. Thin crispy crust, still pillowy on the inside.

Technique wise its super accurate too, from the cross scoring of the squid to the inflation of the duck followed by scalding with boiling water.
