I’ve never heard of that, but I’ve also never been to Peru. I guess now that I think about it, some ceviche does taste more raw than others.

It’s the temp not the time that’s bad for ziplock bags. Above 160ish their seams are prone to melting. I’ve sadly had it happen (But only once) and it sucks.

I did rack of lamb for the first time. Team Pan in garlic and rosemary and butter the whole way until internal was 128 or so. Super delicious. I was happy my boys liked it so much.

Lamb looks amazing.

I've made this lamb chop recipe a couple of times, and it comes out amazing every time. Only thing I changed is I seared them slightly longer and put them in the oven for a little less time (6 mins tops, 10 minutes at 400 is ridiculous imo and will come out well done).

So Kenji’s smashed burgers have basically ruined the experience of going out for burgers. I mean I’ll go out for a burger in a pinch while traveling, but no more special trips.

Served with diced red onion underneath deli sliced American cheese on a toasted potato roll.
