I don't often post in this parts but Fried Chicken has always been a bit of a fave of mine and totally agree when done well there's not much more than needs to be on the plate.
Now here's where I get a bit controversial, and may well get laughed off of the forum.. I absolutely love the taste but as I get older I can't stand even the slightest bit of excessive oil, and so now do my own version in the oven.
I coat the pieces in egg white and then generously cover with flour/seasoned coatings, and let sit for a half hour or so for it to absorb into skin before putting onto a raised roasting tray inside a deep dish pan, and into the oven at a lowish temp (130-150C) and turn each 25min for a total of 4-5 times.
I use a raised tray inside the deep pan because I pour small amounts of water into the base of pan before each turn, and as it cooks the water evaporates and keeps the chicken and skin as (if not more) moist and tender than any other method. I think it tastes better too as all you're getting is the flavours you've added. You get the full fried experience with the juicy flavourfull skin, but without any grease whatsoever.
