my red sauce is always perfect.
I use spicy olive oil with sweated onions, garlic, cayenne flakes, sugar, tomato paste that i then reduce in tomatoes with dried oregano/basil. I blend it all with a hand blender with fresh oregano and basil at the end. So the sauce is thick, spicy and sweet with the sugar/onions blended into it.
