To make excellent pancakes DO NOT follow the instructions on the bag. Below is the way to go to make pancakes depending on size and amount. Adjust to your own taste.

Use the mix, add milk, add egg(s). Stir.
Now add the extras that make the difference, modify extras and amounts to your own taste.

Add ground nutmeg.
Add Vanilla (use real vanilla, the best comes from Madagascar)
Add some orange flavoring. Even if imitation.
Add fresh blueberries or huckleberries.
The mix should be thick; not runny.
Cook until golden brown on medium heat. Plate the pancake. It will smell delectable.
Add real butter and let it melt. Pour on some real organic maple syrup. The good stuff. Don't ruin the experience.
This goes extra good with some thick meaty bacon cooked just right.

Some fresh squeezed orange juice to drink is the perfect kicker.

The cat or dog will lick the plate clean for you if you don't do it yourself.

The roommate also insists on buying pancake mix. I don't get it, but since he makes me pancakes on days I don't feel like getting out of bed, I let him. But I always forget we have it and make them from scratch when it's my turn.

Now I need to make spinach dip for Christmas.

Where’s the cranberries? I’d say cranberries canned whatever more critical than the stuffing. Heck this year I only did Wild rice stuffing.

Pancake mix is essential (get the best). Only nits, dweebs, and religious fanatics, insist on making a mix from scratch, which can actually introduce more errors than from any supposed benefit.

God eats my pancakes and loves them. Best in the universe He always says!

Let that baby slowly reduce now, looking good. Good news Cowgirls can’t lose this Sunday while it gently reduces.

Tomorrow is Fry Up Some Corn Tortillas day. Tostadas are my favorite use for leftover chili. Chili baked potatos also on the menu for this week, lol.

The avocados in the first pic were a care package from my cousin in San Diego, fresh picked from his tree in his backyard. They're ripening with perfect timing this week.

Never had it, but why not. Anything missing in this marinade? Somehow have everything listed. Peri Peri chicken.

2tbsp of ground coriander

1tbsp of dried oregano

1tsp of dried parsley

1/2tsp ground cardamom

1tsp of birds eye chilli powder or Peri-Peri chilli powder if available (Adjust to your spice preference)

1tsp of black pepper

pinch of mace

1tbsp of salt

1tsp of sugar

Wet ingredients:

1 small onion, peeled and cut into four

4 garlic cloves, peeled

1tsp of fresh ginger, peeled and diced

1/4 of lime, skin on, seeds removed

the family that always won our town's annual chili cookoff once told me the secret ingredient was adding chocolate

to this day i don't know if he was serious, trolling me, or trying to throw me off the scent since we competed

Speaking of peri-peri, you guys ever try this sauce? Pretty good, a little like a citrus-y Buffalo sauce kinda. I like it.

Nando's is a big chain here in the UK, originally from South Africa.

Do decent chicken and sides, but always feel I could just do it myself for quarter the price.
