I like the stuff added to Pho but the Pho broth I've had has been consistently bland. Based on the love for it, I'm thinking I need to try it again to give it another chance

People from Bay Area may have an argument but I think Houston is likely the biggest pho market out there. I’ll try to post something here in the next week or so.

not surprising at all. the bay area and houston have huge Vietnamese populations, both primarily due to the fall of Saigon. Camp Pendleton > Bay Area and Fort Chaffee > Houston

yup. Best Baguette is right next door (likely owned by the same people) and serves some pretty damn tasty banh mi for cheap including the classic with pate, pork roll, and head cheese and ham. they also have an onsite bakery and do french sandwiches, croissants, and pastries.

I went on a business trip with a Vietnamese coworker to OKC last week. He has a strong almost Cajun accent I figured he was from one of the those Gulf Coast shrimping towns with a bunch of Vietnamese but nope Houston. He’s supposed to come into the office in the next week or two and we’ll hit up a good Vietnamese spot in Houston Chinatown/Little Saigon. I’ll take pics.

Visited there many times when I worked over there. Never the Pho place though. Miss on my part I guess.

never went to Pho King either. Best Baguette was always the destination due to taste and value.

for the rest of you, every bahn mi is under $5 and they are a little skinny on the meat sometimes (not my pic, and I'll end the derail now).

no kidding, they make me nauseous as well. Seems like he's resorting to this method to make it easy to crank out and upload videos. They're too long as well

Been listening to Always Hungry with Bobby Flay and his daughter Sophie. It’s fantastic, btw. I’ve picked up some good tips, one of which is to cook salmon at a lower temperature. I grilled a side at about 275 and it was so much better than what I was doing before which was closer to 400.

In the oven? How long did you do 400 for and how long do you do the 275? I love my 400 degree oven salmon for like 12-15 minutes, I’m interested to see improvement on it. Also sous vide salmon that you skin side sear on a skillet afterwards is phenomenal too.

Any pizza oven users out there have trouble managing the cook time? About 50% of my attempts have yielded uncooked dough towards the center. I have tried par-baking before the final cook with moderate success. I keep reaching a point where everything is going to burn if I leave it in the pizza oven any longer.

Any tips out there?

What kind of oven are you using? Make sure you give it a solid preheat, the stone takes a long time to heat up.

Also what’s going to burn? The cheese the crust? The toppings?

Just off the top of my head you’re getting too much convection and not enough conduction.
