That said, cooking the steak with the onions is a total n00b move. It just produces boiled steak. Cook the steak separately so that you can get some browning.

Cheesesteak should be a gooey mess of browned cheese and steak mixture topped with onions (and green peppers+whatever you like)... not a steak of cheese on top of some boiled meat and onions.

Here is a better saltbae variant of the "cheesesteak", crappy kraft cheese and all.

Anyone have a good asian type of sauce/vinaigrette they would use for roasted broccoli?

Might use momofuku’s octo vinaigrette, but worries it might be too overpowering.

Nuoc Cham sounds excellent. Think I’ll use it on flank steak tomorrow and just simply roast the broccoli.

Since I’m always asking for advice here figured I’d leave a recipe. It’s simple but delicious.

Roasting broccoli:

Pre heat oven to 500. Leave baking sheet in oven to get hot.

Toss broccoli with olive oil, salt, crushed red (however hot you want it or not), black pepper.

Throw it on the hot sheet for ~20mins. Don’t turn it.

Toss with a big squeeze of lemon, and good grated Parmesan.

Just the technique I saw from Kenji. It’s so good.

My favorite Broccoli Recipe is to grill it or toss it in a Wok to cook it (Oil, Salt, Pepper before cooking).

Then toss it with a sauce of 1 part Sriracha, 2 parts Soy Sauce, a dash of Sesame Oil, and a couple cloves of minced garlic.

Maybe it’s all a persona, but it looks he works to his restaurants close and than puts in hardcore work out sessions at like 3AM.

It appears he comes from humble roots and worked his way up in the restaurant biz. Moved to the UAE and hustled to get to the top. If it’s not a sham I have a ton of respect for him.

I make an almost identical version I got from this recipe where it's roasted in the oven but same ingredients. It makes me demolish broccoli it's so good.

This thread is not exactly right for this, but I didn't find a better one. We made burritos and picked this salsa for the first time. It was so good I've been getting more things just to use it on since. It's on the hotter side for "medium".
