Tx is ever the purist. This might be in that video but I believe the practice of smashing the onions into the meat started during the Great Depression as a way to stretch the protein.

Chopstick recommended this sometime ago and if you like garlic it is a must try. Says it will hold for up to a month in the fridge. Just heaven.

Thanks for the recs. Impulse-bought this the other day because it was all natural and looked good. Just trying new stuff. Had had a bite here or there over the years, but that's it. Had this all at home so lucky me:

Was given a couple pounds frozen U12 scallops, they look awesome. Any recs for good sauces or sides to go with seared scallops? Thinking I will cook a few at a time to experiment. From my memory most good restaurant scallops I’ve had had either an acidic sauce with good color or something fatty like bacon/pancetta.

Any recs for your favorites??

i dont think a good seared scallop needs any sauce, but if you have that much you could do civeche, pastas, surf n turf. bacon wrapped is good but kinda loses the point, altho at that size might hold up better. its a pretty good canvas to cook with.

Scallops served with a chunky tomato sauce base and pesto over the top are always a favorite. Don't forget the garlic bread

Hmm doing some reading and seems there is some controversy about if frozen Costco scallops are “wet” or “dry” and if they are wet if I should do some sort of soak ahead of time to reduce preservative taste. The package makes no mention of any additives/treatment. Guess I may just cook and eat 1 to see how it comes out.
