Baked the bread in an actual rye bread pan vs. my bread machine and the difference was clear. Smoke 6-7 hours, chill, and instant Pot remains my fool-proof pastrami method. Probably my best overall execution to date.

I don’t know if I’m feeling the Reuben. I like a Reuben but that pastrami looks so elite and you made a nice load of rye. I would eat them with maybe just a bit of spicy brown mustard. I don’t want the kraut, cheese, dressing taking away from the pastrami.

I can’t hate on this opinion. Pastrami/Mustard/Rye is an all time classic in its own right, and I can’t fault anyone for making that choice.

I made a gravy tonight...an Italian meat sauce. Snapped some pics of key ingredients.



Garlic simmering on a bed of sautéed onions, crushed red pepper flakes, oregano, bay leaves & olive oil.



Pan searing pork bones, the key to a delicious gravy.



The meatballs! It’s sacrilege but I bake mine. Still get that nice browning tho.

Anyone been to or familiar with the city of Chengdu? Trying to find a street food: sweet crepe made using the sides of a wok. Batter is spread out around the wok and finally cut vertically into pieces when ready to eat. Thanks!

It’s my understanding that marinara sauce (just crushed tomatoes, basil, salt, olive oil?) is traditional Italian or whatever and “gravy” like in Goodfellas is strictly Italian-American. Correct? Do Italians in the old country make anything similar that’s tortured on the stove for hours?

Using Prime NY Strip to make pastrami? Say whaaaat?!?!

More practical than anything. Had to finally butcher the prime NY Strip I got from Costco a few weeks back. Freezer space wouldn’t accommodate all of those steaks, so I’m smoking a roast tonight, freezing another for Christmas, and then brining this pastrami. Very anxious to see how it turns out for $8/lb meat vs half that for the brisket I normally use.

All of this pizza talk been making me hungry. Took a shortcut on the dough here. XL 14" deli cheese pizza from WallyWorld for $5.99. Really need to up my pizza dough game. However.....
