OOT cooks,

Some weekend cooking:

Made another batch of pickled veg. Cucumbers, red Fresno chilies, jalapeños, shallots. This recipe is super basic and great. https://www.foodiecrush.com/sweet-an...led-cucumbers/


Sister made Strawberry and cream cheese (kinda like cheesecake flavor) ice creams from some cookbook, I made some milk bar confetti cookies from a mix.

My little nephew and niece wanted to make their dad Father’s Day breakfast so I helped them make it. These muffins are excellent.


Of course, what’s breakfast without some meat? Black Forest bacon and breakfast sausage.

Here’s one thing I learned. Don’t just mandoline a hot jalapeño pepper and two fresno chilis seeds and all into your batch of pickled veg unless you want it all to be hot as ****!

Re-using the brine from pickled hot peppers works pretty well for making spicy cukes/etc. Easy to judge the heat level.

Diablo burger looks excellent.

Made fettuccine Alfredo with shrimp totally from scratch this weekend, was very good. Used an American style alfredo recipe (i.e. with cream), very rich but delicious. Lemon zest helps cut through the fat a bit.

Probably 20 minutes to make the pasta dough (did that a couple days ago), an hour to roll/cut the pasta, and an hour for everything else (prep/cook shrimp; make sauce, cook pasta, prepare and serve).

most common would be khai jiao (thai style omlette served over rice) which is pictured above in the top left corner, but yeah everything. fish sauce is super salty, i like to go more lime juice/less fish sauce. my backyard has a persian lime tree that produces these baseball sized limes that i get a ton of juice outta.

Was inspired by El D to do an elongated Sous Vide short rib.

Unfortunately I only had 48 hours and not 72. Also, we looked at different meat consistencies and determined my parents would prefer the slightly stringier texture, so we're doing them at 144 degrees instead of my preferred 129.

Will post results tomorrow.
