The important part is the grilling of the bread and the melting of the cheese (
any kind of cheese, or combination of cheeses - for God's sake let's not get into people claiming a grilled cheese made with the 'wrong' king of cheese isn't a grilled cheese and needs a special new name), not the fat used for the grilling (in my opinion, obviously).
So IMO butter is legit. Mayo is legit. Olive oil is legit. Coconut oil. Peanut oil. Vegetable oil. Et frigging cetera.
We don't need
different names for the same sandwich just because the fat used for grilling is different. Some might prefer one, some another. That's not the point!
Maybe scrambled eggs made on a flat grill needs a different name that scrambled eggs made in a skillet, and scrambled eggs made in a saucepan needs a different name than scrambled eggs cooked in a non-stick fry pan. The all the different fats that could be used cooking scrambled eggs. We could have an
infinite number of 'names' for the idea of scrambled eggs.

And a grilled cheese is good, but a grilled cheese with tomato or bacon or mustard is not a grilled cheese? Or is it a grilled cheese plus? I don't mind specific variations having their own names, but it is more to important to think about the ingredients than what sort of pan was used.
Is a coffee with cream and sugar not a coffee?
Then why is it known as a 'regular' coffee?
