i honestly have never heard of 'yacht rock', but so far the songs in the thread have reminded me of this (not sure if posted yet)...does it qualify?
Not really...the a certain "something." An artistic motivation beyond a simple pop song...and it needs to be so well produced (for the most part), you're in awe of its sonic quality.
There's a famous story about Steely Dan's "Reelin' In the Years," where they had like 18 session guys try the solo before they got exactly what they wanted.

I think I get it, kinda. That there have been two Boz Scaggs songs posted, and neither of them is Lido Shuffle, seems like a useful definition/example for what is and isn't "yacht rock" (?)

Yeah, I love Lido Shuffle, but I don't think of it as Yacht Rock, but Jojo and Lowdown are.
2nd one - while I hear certain things in it that might sound like Yacht Rock, I'd have to say no. Maybe Keep On Lovin' You? But I'd have to say most of REO SW is classic rock.
I wouldn't be offended if someone tried to argue this song isn't yacht rock, but I guarantee it wouldn't feel too out of place on any yacht rock playlist:
