Those are oversauced, overchopped/pulled examples of bbq brisket sandwiches.

A bbq brisket sandwich can be truly great, but it doesn’t look like those.

People really prefer bbq beef brisket over pulled pork or what’s probably pork tenderloin prepared really well in banh mi? I love bbq but find Texas BBQ compared to true pork based southern bbq very overrated. The ends of historical geographical bbq is overrated, For example North Carolina and Texas. Need like Tennessee bbq, the best of both and they leave the rest.

Tenn bbq is the worst of both worlds. Cow>Pig Pulled pork is much easier/borderline easy, to pull off a passable product. Good brisket is much harder and less prevalent.

Thit nuong (grilled pork) is better than xia xiu (char siu) in a banh mi. The quality of char siu in most banh mi shops just can't stand up to a Cantonese roast meat place.

Tennessee bbq is definitely better than NC. It’s all a matter of preference. I think some Tennessee bbq places and dishes are overrated but most are delicious. I’m still not a fan of vinegar based NC bbq sauces.

it tastes better with rice anyways. I pretty much order pork combo exclusively. Occasionally a full pate or a nam sausage. However, I prefer Thai nam sausage (Top brand) eaten straight up with Thai chili and Thai pork rinds (Top brand).

This is why bahn mi isn't more well-known. There's usually only one or two Vietnamese restaurants near me, and I'm always going there for the pho. America needs more hole-in-the-wall Vietnamese sandwich shops before it really takes off.

I just think you can do better more interesting stuff with tough/cheap cuts of pork vs. beef by slow cooking, smoking, bbq and get better with results with pork than beef. I guess to your preference.

Also the poster child of Texas bbq is brisket. That being said I prefer taking a brisket and preparing corned beef, pastrami or a nicely prepared Jewish brisket.

Also in general beef is greater than pork. Can’t imagine someone arguing pork filet or rib roast is better than beef filet or rib roast or other high end cuts.

I'd rather have dry rubs then some sugar coated nonsense like you said. I never really got the love for BBQ as far as sauced up meat. Dry rubs are for men that train, BBQ is for dudes with ***** tits and a high hypoglycemic index diet.

Brisket also shows up in KC BBQ in both regular brisket form and burnt ends whereas beef ribs are uniquely Texas.

Bbq prime rib also uniquely Texas but thats even more rare (no pun intended).
