Those of you making your own (but without a venison source): what cut(s) are you using?

For beef I used to use top sirloin or top round. Whichever was a better price on a 'family pack' of 4+lbs that week.

If you make your own, does it make sense to do a sample piece or two first, to make sure you have the seasoning where you want it?

I trust the star ratings on recipe sites, and if the first batch isn't perfect I adjust from there.

A 5 * rating from 200 people will leave you with something decent.

What is the yield on making your own from raw weight to jerked weight?

I suspect the reason jerky seems to expensive is because it's meat with all of the water out of it, so 3.5 oz of jerky was quite a bit more than that in raw steak.

I'm just curious what 10oz of raw meat gives you in jerky. Anyone know?

Google and experience will give you the precise answer but ballpark roughly a half for trimming and water loss

I really like Krave jerky too....always very tender and flavorful, though it is sweeter than most jerky I've had.

Amazon has a good variety pack I've ordered a couple times...10 single-serving packs for $20.

Seeing how the subject has been brought up. I got a tofu steak on a cruise this year it was horrid, I was hoping for it to be like the jerky Low Key linked but you know steak instead of it being dried like jerky is I forced down a single bite and was done with that the taste made me want to throw up.

Strange fat guy I was forced to sit with because I was not cruising with a group, asked if he could have it after I had taken a bite and was done with it. I didn't think he was serious but he was so I slid it over to him he liked it so much he ordered another lol.

Both. I like beef jerky that's more tender for sure, but this was just weird. Hard to describe but the texture was sort of like if I chewed up some regular beef jerky, spit it out, then somehow glued it back together and re-dried it into one piece.

Flavor - Garlic Chili Pepper. Sounds great, right? Wrong. Horrible. Tried to power through it and just trashed it maybe 50% in.

Would be pretty difficult to make beef jerky that bad if you tried. Impressive that these con artists sell it for like $7 a bag with fancy flavors and have tricked people into thinking it's actually good. Gotta hand it to them.

I love Krave, it's so tender. I suppose it only appeals to women and wannabe foodie nancy boys with weak jaws like me. You shoud leaast try the basil citrus turkey jerky before you dismiss them totally. Also, beek jerky review totally disagrees with you.

Krave lost me at "sweet". I don't want any sweet flavors when eating beef jerky. Unless it's some dank teriyaki.... even then I would never buy teriyaki over some "peppered" beef jerky.

Just my personal preference obv, but I was raised up eating venison jerky made by the processors that we took it to. Which 9/10 times was some meaty, peppery, sometimes tough, epic goodness and a lb wouldn't last more than a day or two.

Bigjohns is the closest I have found to that. It's still not as good though. You just can't beat some good venison jerky if the processor knows what they're doing.
