After a two week evacuation for hurricane ida we are home with power thankfully but an empty fridge and very limited stock at the stores. Decided to look for an easy bread recipe and since I do not own a loaf pan I decided to do a round Dutch oven loaf. I’ve never made bread like this before but have made many pizza doughs. Overall I’m happy and looking forward to a sandwich tomorrow.








Looking at that last pic again I could’ve definitely done a better job folding but was chasing a 3 yr old kid around all day and had to work fast.

I blatantly stole a concept from a local bakery...basic sourdough, add in chopped artichoke hearts prior to bulk, shape into boule, bake then brush with good olive oil right after taking it out of the oven. Dust with some garlic salt and ground thyme (because that's what I had on hand). Try not to eat the whole thing at once.

I love my pullman pans



But each loaf is about 2.2lbs and my hand would be sore the next from all the slicing, so I got this

Not sure if that's a reference to something I'm missing, but yes, it is the best thing. So far at least. Haven't tried it on my rye bread that sticks to the knife so much I need to wipe if every couple of slices.

I got one for Christmas and have used it a few times. Biggest challenge has been scaling recipes to end up with the right amount of dough.

The technical side made me feel a lot better about doing high hydration recipes should the desire arise. Shaping is always an issue, though
