Our main courses this year are chicken spaghetti and smoked chicken Mexican casserole. Traditional sides. Will have ham for Christmas. Looks like turkey is geting squeezed out this year.

Anybody else doing non- Traditional food for thanksgiving?

My cousin does the heavy lifting so I'm just doing the old Alton Brown braised baby backs

I'm attempting a Thanksgiving-y vegan dish with roasted tofu, potatoes, and brussels sprouts. Served with brown rice and mushroom gravy. Using sage and thyme to Thanksgiving it up.

I'm on green bean casserole duty. I want to put bacon in it, but can't take the risk that there won't be a vegetarian in the crowd

Goddammit, I think I have enough ingredients to do that. Your very sensible suggestion has just doubled my workload

More than doubled. It doubled, and then you had to prep bacon.

I don't count cooking bacon as work

Haha, nice work! On behalf of vegetarians everywhere, I thank you.

My vegan roasted tofu/vegetable dish with brown rice went over gangbusters. It was my main course, but many non-vegetarian/vegans ate some as a side, including many of the kids. I was very pleased.

LOL, busted by the clock - there was a lot of prep ok!

And I now have a lot of leftover green beans - and they were not the ones with the bacon in them Thanksgiving / Holiday Feast thread

Big,

Lemme see what I can do about that old post later. In the meantime, highlights from today.

I made the winner appetizer, a bunch of deviled eggs:

Side of the day was hasselback gratin potatoes:

Main was serious eats sous vide deep fried all belly porchetta:

Star of the day were sister’s desserts, as usual:

Chocolate cream pie and lemon curd marshmallow buttercream cake.

Does anyone else not prefer seared scallops? It tastes great, but overwhelms the scallop flavor.

I much prefer poached/raw/stir-fried than the heavy butter sear that seems to be the norm.

This year's spread:

The zucchini was a big hit. I'll have to double the recipe if I make it again.

I have a place that sells U10 New Bedford dry packed sashimi grade scallops and I rarely even cook them! Just slice raw and eat with a wasabi soy sauce and it’s awesome

Big: bacon

M: both desserts are from the Stella Parks bravetart cookbook http://bravetart.com. Here’s a version of the lemon curd layer cake: https://korenainthekitchen.com/2018/...ne-layer-cake/

Econ: how’d you do the zucchini?

Pokerjo: make more bacon obv.

x: at first your question sounded crazy because seared scallops are great, but then I thought of super tender and sweet lightly poached or raw scallops like Durango mentioned and thought you might be right about them being better.

Raw > lightly poached > seared > stir fried

All are fantastic though.
