In the Bond movie, Casino Royale (which was released in the last few years) they changed the original game of Baccarat to Hold'em.
This annoyed me to the nth degree as Hold'em was not being played in European casinos in the 1950s/60s when the book was written nor was it being played much outside the South (which I am reliably informed will rise again!
).
Moreover, I think spooks would still probably prefer Baccarat to Hold'em.
