Here is an equity definition from a glossary I developed:

Equity- the probability that you will win the hand if it is played to showdown (including a split of the tie probability); equivalent to the portion of the current pot you can expect to win – sometimes expressed in chip or dollar amount rather than percentage. If you are risking an amount R then equity * Final Pot after all bets has to be at least R for the bet to have positive expected value.

Example: You hold KcTs on a board of Kh 4c 8h Th, three hearts. You are almost certain villain has a flush when he goes all-in. You have 4 outs for a full house win which has a probability of 4/44 = 9.1% of hitting with ties not possible. Your equity is 9.1%.

Equity in business refers to how much of the asset you own.

In poker, it refers to how much of a pot you 'own' based on the probability that you will win the hand, and that the pot does not change. I think it is a somewhat inaccurate and misleading term. I also find it to be a simplistic number and not always useful number

I much prefer using EV, which can include different equities for different outcomes and different pot values. EV is much better at considering multiple branches of the outcome tree, where equity can only consider two (you win or you lose).
