Long story short I went from a western country to Eastern Europe and when I regged my account of the local PS, it says it can only be used on .com, what are my options now?

Email pokerstars.
If the OP wasn't so vague some of us could maybe offer some help but western europe has several pokerstars clients .UK .EU .DK etc. Also eastern europe is mostly on .com i believe but a few play on their own clients. Which country you left and which you went to and a copy of the pokerstars email you received would be of some help as it stands your OP is not much help.

Your only option is to play on the Pokerstars version that’s available in the jurisdiction you are located in. Doesn’t even matter if you move there or go on a weekend vacation.

Not entirely true madlex. I play on .UK and can play for short periods wherever .EU and .com is the correct client. If you go somewhere with its own unique client like the Czech Republic or Denmark for example you can't play.

I thought.eu/.com/.uk was basically the same accout and accessible from the same jurisdictions? Maybe that changed.
But to play from let’s say Italy, you need the .it client and account. If you managed to get that account, you can play from Italy no matter if you live there or just visit. But going through the work to get an Italian account is obviously not worth it unless you are there frequently.
