Observe how often they open raise/flat call/3b etc, know what a standard range for that frequency looks like, then filter it down as we get more information

Equilab offers a free equity calculator that will give you these answers.

Online, it is easy to get these numbers using a HUD, which costs about $100. Live play is harder. Rather than try to come up with exact ranges, I try to figure out what type of hands a villain will bet or call. I want to figure out whether they feel TP is the nuts or a calling hand. If they raise pf, then bet the flop and turn hard on an Axxx board, they likely feel TP is a strong hand. If they call down three streets and fold without showing to a set or better, they are going to be calling stations. Adjust your game accordingly.

This tool gives you a pretty gerenirc hand range based on opening frequency. Keeping in mind, of course, that it does not take into account player tendencies (for example, some people over value small pocket pairs or lw suited one gappers more than they should) and it does not include any bluffs in a players range. But it is an OK place to start

You really aren't looking for exact ranges (especially in live poker, where you don't have a large sample size and exact VPIP percentages). Instead, you are looking for general tendencies to help categorize a player as loose or tight, and to document any tendencies he might have.
