What would be the best to build a bankroll in today's world ?

I plan to start with $500 and play on pokerstars.

My first idea was to play micro stakes cash game but the players are better than a few years ago and I wonder if the rake is still beatable ? Also is it better to play full ring or short handed (for the rake) ?

If the rake in micro stakes is not beatable I would have to play tournaments then.

As I like to play several tables (8 is my favourite); what would be the best strategy ? SnG (normal, turbo or hyper ?) or big field tournaments ?

Don't make a decision based on building a bankroll, make it based on what you prefer or are better at.

There's no point in becoming a tournament player if you hate playing tournaments, you know?

If you prefer cash, play cash. <------period

Honestly I would continue breakeven micros (attempting to get better doh) and build a bankroll through your regular life (real job). Deposit when you have enough to jump to the next level.

Stop worrying about rake. Full ring starts to die out as you move up in stakes. So, don't neglect your short game or you will pay the price later. I think full ring is a bit tougher than short. Don't quote me on that. Win rates are about the same.

I can't speak to tourneys as I don't play many of them.
