Hello!
Why professional poker players are interested to make a coaching videos and even sell courses with strategies? If everyone will get better, than the top players will earn less money by playing poker.

Because it’s variance free money. At least to some, it’s also way more fun and less stressful than playing.
And if everyone was like “don’t make them smarter!” we wouldn’t have teachers in any field.

Because for some (like me) the most rewarding thing about being good and becoming better at poker is the ability to teach others how to do the same thing.
Also teaching low skill players may actually improve their winrates at the higher stakes, since more new players will flow into the higher stakes where the pros will still have big edges on them.

Some people enjoy teaching. It's fun. I do coaching streams for free with no way or intent of monetizing it. It's nice to share ideas, it's a human inclination.
There are certainly a lot of people who do it for the money and fame/ego, and usually it's a mix of the three, which is, hey, fine.
