I am pretty new to trying to use poker tracker and I am just wondering which stats specifically do people put on their HUD. The ones that are immediately apparent without the extra click. It defaults to VP/PR/3B ...etc. I assume people customize this to show the most relevant stats. Which ones do you guys use? Also, why?

After the 3 main ones you mentioned, I think it's fairly standard to add "c-bet flop", "fold to flop c-bet", and "fold to 3-bet".
FWIW, I barely look at most of the numbers until I have at least 100 hands on someone. Except for the really out of line players (whales and ubernits) HUD stats over small samples are fairly meaningless, because any reg can have a mini-heater or be card dead for a few hundred hands.

in addition to the ones mentioned, i like the steal stats.

Fold to Steal, attempt to steal, and 3 bet steal are pretty helpful for when it's folded to you in a BvB or BTN vs blinds scenario. If they fold to steal 96% of time and then 3 bet you this time it's safe to say they have a hand thats higher on the ranking than say a JTs so tread lightly. Then you use the cbet/ fold to cbet stats to evaluate what to do on some flops
