AFAIK most rooms don't hire prop players at all. For rooms that do (I don't know which ones) you have to be willing to play whatever games they direct you to play. I assume you can work out which games and limits you are willing to play ahead of time, though.
I don't think they get paid very much. I recall someone saying they got paid something like $10/h for being a FLHE prop player.
