Newb here. Sorry if the answer is obvious.
Suppose someone bets you at even money something along the lines of 'Ethereum will have a higher market cap than bitcoin by the end of the year.' Can you do some combination of taking the bet, buying ethereum, and shorting (in some fashion) bitcoin to guarantee you will come out ahead?

Depends on the odds you can get on each wager (the market cap bet and how you short BTC), but yeah there are always arbing opportunities if you can find someone to make a dumb bet like "I'll lay 10:1 that ethereum market cap is higher than bitcoin's by the end of the year"
This definitely happens in sports betting, and used to happen a lot more; I think it happened / happens in the stock market as well. It also happens in poker too if you think about it — bad players are willing to wager that they will get favorable flops / turns / rivers at really bad prices.
