there's been organized money matches for games for years but they've never really picked up traction outside of side games at fighting game tournaments. they are not popular for many games for a multitude of reasons, major reasons being the impact of lag and the potential for hacking, as well as the reason that chess money matches are way less popular than poker because there is no luck factor to winning, its just pure skill if you control for lag and cheating. fighting game money matches have always been popular since the arcade game era though, partially because of the culture surrounding fighting games.
