2) No, you can't see the cards and hold them because it is a common casino rule, even when a card hits the floor, the whole deck gets changed in order to avoid any possible card marking, scratching or any other manipulation in order to gain any sort of edge.
3) The games you played were probably 2/2; common sense tells me that no cheating can happen for a couple hundred of euros, the risk:reward is just way too bad.
