They would have to prove to a jury that everything that was taken from thr house was in fact yours and not hers and that you never made any promises to ownership of said items. Further there is some common law issues that would have to be overcome.

Domestic relations law isn't my specialty (nor is criminal law), but being engaged makes no difference for community property purposes, and Nevada is one of 9 community property states. The property is his- period- and she stole it. Sure, if she can show she paid for some of the property then it's hers, but from OP's original story, she was basically broke when he took her in.
It's his property, she stole it, and she's in big legal trouble. Particularly if OP has the money he says he does- he can presumably retain a lawyer to light a fire under the feet of the Vegas authorities.
