Dealers are used to dealing to an empty seat with a stack when there are more stacks than bodies seated. However, its likely that most dealers have never dealt a down where there are more bodies seated directly along the table than there are stacks. I faced that situation only twice in 5 years of dealing. One was similar to the OP with an assistant. The other was when a player was such a baccarat whale that the casino gave him special considerations, like letting his female companion sit next to him in a players spot at the poker table even though she wasnt playing.

So sure dealers deal to stacks when a player is missing. But the visual cue of a person sitting at the table 99.99% of the time means the guy also has a stack, or he wouldnt be at the table in the first place. Muscle memory is a difficult thing to override.

I once had a WSOP dealer get so flustered that they stood up from the table and left in the middle of a hand.
