Gus doesn't use it only this way. Watch "Casino Royale", Le Chiffre (danish actor!) says "ups" after winning a big hand vs Bond. I think Gus got it from the movie.

No back in the day on UB on the Wadello account long before Casino Royale, he was also going "ups" constantly.

A lot of the time it's after he makes a bad call but wins, pretty sure it's just how he spells oops.

its still a smart move for him to leave b/c in the end he would just get owned and ppl would hate him even more

UPS means the same thing as ship it basically. Since UPS is a service that ships things, instead of saying ship it he's just saying UPS.
