I think it depends what evidence you consider. Certainly the game has been brought to more peoples' attention through the popularity of livestreams and all the drama around them, Doug Polk and others' youtube channels and Polk's poker room/livestream, poker Twitch streamers, etc.
Also, during COVID, interest in strategy games increased, chess.com experienced like 3x growth of users in a 6 month period.
In addition to poker receiving more public attention, you now have user friendly GTO studying programs online at a reasonable price point and the accessibility for a newbie into the game has never been higher.
On the other hand, if you consider the evidence presented by this video, you have (afaik, I don't know Winter but I mean kurganov, koon, o dwyer, chidwick, Dan S) a table literally full of professional players discussing the "VIP" players who support their incomes in these high roller live MTTs. It's a pretty fragile/delicate ecosystem where the edges are very small and any skilled player who can find a backer can in theory push into these games. For these reasons, I can see someone making the argument that "poker is dying."
