Well you can of course, and in a normal situation - you do a deal with 1 million left and chip leader gets 525k and the other guy gets 425k and you then play it out for the last 50k. Chip leader at the deal stage loses at the end, but has 525k vs. 475k in winnings.

As I explained on Facebook, Canadian Patrick Serda had 80% of the chips heads-up, but was willing to sell his "privilege" for only 1.3% more of his ICM value (€10K / €709,427), giving up on being the champion and settling for second place. So without playing a single hand, William Kassouf will forever be remembered as the last ever EPT High Roller champion, with the winner picture and trophy "like a boss." He will get a lot more utility or "coconuts" than the €10K ICM value he gave up, including future sponsorships or free buy-ins (maybe partypoker or Dusk Till Dawn?).

Congrats to Patrick for the bigger €719,000 cash. His biggest cash was $39,610 in Manitoba.

Well, he won a scoop this year for over 200k and had another scoop score of nearly 100k this year.
The trophy was worth 10k to kassouf. I don't think there are many people that would back him today that wouldn't last week, or people who would sponsor him today that wouldn't last week but that's your opinion.
