When Yong flips over his hand at the end and he is last to act, this is very much a Macau thing. It's basically rude there not to just flip over your hand if it's clear you won, even if you can force the other player to show first.
It's a cultural thing, having to do with saving face and not forcing people to show hands that they played badly. Some people still do it but they are definitely seen as huge dicks by the other players.
