I've had this issue for around two weeks now. I asked my opponents a few times and nobody seemed to have the same problem, which made me think the issue is on my end. I haven't been able yet to test with same internet connection on a different device. However, I've been using the exact same setup for around a year now and I'm not running any software at all when playing on Stars.
Any advice? I guess re-installing Stars is the first step I'm going to take if this is no known issue that's already been fixed.

Are you playing Zoom? Zoom has always been quite laggy at certain times of the day for me, not sure there's much you can do about it.
You can try excluding the Pokerstars folders/processes from your antivirus, turning off animation/avatars in settings, check your Task Manager to see if there's any cpu spikes (it could be cpu lag rather than internet lag).
Edit - try a different theme too. Some of them can be more resource intensive than others (Mercury theme is definitely worse on a slow computer, not sure about others).
