On this, it seems likely that you and PokerStars have the same preference: both them and you would be better off if the money was returned to you. That is, they're better off with the money in your (legitimate player) account, than having been taken by some fraudster.
Given that both you and them want the same thing here, and given that they're saying that they can't do it, it is likely that they have a legitimate reason to not be able to return the money to you.
That legitimate reason is likely that the money has already been cashed out and taken from the PokerStars system. That obviously harms you, but it (perhaps not obviously) harms PokerStars as well as described above.
If you want to pursue this further, then you could report this to a local law enforcement agency, in whatever way you would otherwise report $100 being stolen from you. There's nothing special about the internet that allows people to steal money from you without facing criminal consequences for those actions.
At the end of the day, while PokerStars should* try to recover your stolen money and get it back to you, at the end of the day, you appear to a victim of a crime, and thus, should treat this in the same way as any other criminal act: by reporting it to your local law enforcement agency. They're the people who are responsible for catching criminals, PokerStars isn't the police of the internet or the world.
*and, to the best of my knowledge, does.
