Every time one of the big pros play, there are tons of railers watching intently, and depending on how big they're playing, keeping track and posting hands. Plus sites like PTR and HSDB are constantly tracking pretty much every hand they play. It's not impossible to look up the site pros' winrates. If the site was rigged in their favor, it'd be found out pretty quick.
Funnily enough, most new pros talk about the "red pro curse" where they go on a huge downswing once they get signed.
