A pretty similar thing happened to me a while back. The main difference was that we were both regulars. I punched him in the shoulder and took a $25 chip from his stack. He tried to talk me down to $5 but I wouldn't budge. He still laughs about it and tells the story along with “I'll never do that again“ months later.

Very out of bounds. Don't be a passive person. Don't be livid inside and do nothing about it. Immediately let him and the dealer know that it wasn't OK. If he tries to talk back call the floor on the MF. End of story.

Live poker is often annoying. This is mildly annoying. Maybe between hands say in a polite fashion "Hey sir, turning over the cards without asking is not cool" then let it go. Making a scene , back and forth, calling the floor, and so on is wasting a lot of game time for everyone else, and that is really annoying since you won the pot.
