I am trying to demonstrate to a colleague that 'going south' with your chips is a definite violation of rules for a poker room. Having difficulty finding anything online in writing.

NJ regulation covering all casinos. If the link doesn’t work for you it’s N.J.A.C. 13:69F - 14.7 Wagers, section (c) 1.

In case you had trouble finding it in Suit's link, here is the relevant RRoP rule:

5. All games are table stakes (except “playing behind” as given in the next rule). All chips and money must be kept in plain view. Chips may be removed for security purposes when leaving the table, but must be fully restored upon return. If you return to the same game within one hour of cashing out, your buy-in must be equal to the amount removed when leaving that game.

and here is the NJ reg that cockpit linked:

1. A player may only add to his or her gaming chips, gaming plaques or currency between rounds of play and, except as provided in (c)5 below, may not remove any of his or her gaming chips, gaming plaques or currency from the poker table at any time during ongoing play pursuant to the definition of table stakes as set forth in N.J.A.C. 13:69F-1.1.

where c5 refers to the same procedure as above for removing chips only if you leave the table and bring them all back when you resume play.
