It's primarily a red chip game (or, for 40-80, a peach chip game). But people sometimes come from some other game with other chips. Sometimes they will get a chip runner and exchange them. Sometimes one of the players in the game will exchange some for them. Sometimes the dealer can exchange with the rack. But green and black (and peach and red) chips all play in both games (maybe the red doesn't play at 40, not positive), they are just less ideal and usually they just get siphoned up by a player with a large stack who is less likely to need to put them back in play.
Cash doesn't play, and when one player sells to another the dealer will usually call over a chip runner to exchange the cash back into chips. But with the right dealer and a large enough stack, no one cares if you tuck it behind or under your stacks. The cash in my pic was under the rack until just before the game broke and I took this pic. If they had called over a runner, though, I would have happily echanged them for blacks or reds.
