It may be being done (and it may not, I doubt your claim of undoubtedly-ness) but it would not only have to *be* done but it would have to be done and make its way into a casino to be of a concern.
The people who work on those machines are licensed and bonded and regular casino employees aren't allowed to even clean them as I understand it (which is why they're also filthy).
So I think it would take a planning model of "Oceans 11" scale to get a rigged machine into just one poker table, and then if you can infiltrate the system to that level, why would anyone go for such a relatively small score?
